Philosophy

At Islares Restaurant we want to emphasize the gastrocultural and historical heritage of the north of the peninsula, paying homage to its stews, its traditions, its territory, its surroundings and its nature.

We take advantage of the products of the small artisans of our regions, the recipes and techniques that are part of our culture to shape two menus that cover the entire territory.

The north is our guiding thread and our home. Islares is a small town in the east of Cantabria where Julen Bergantiños, our chef, has spent most of the summers of his life.

Born in Euskadi, from a Galician family and a lover of Asturias, he decides to open his restaurant in the center of Bilbao to present his vision of northern gastronomy, recovering recipes from our guisanderas, obsolete products and traditions that are part of our cultural roots.

Temporality, nature and markets, as well as our welcoming and hedonistic character, mark our day to day and our way of working with our clients, in order to find their well-being and comfort at home, at our home, in the north.
